Coffee Toffee Blondies

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup flour
  • 1-1 1/2 tbsp espresso powder or instant coffee
  • ½ tsp baking powder
  • 1 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup Heath bits


Instructions

  1. Preheat oven to 350 degrees F. Grease a 8×8 baking pan with butter and line with parchment paper. Set aside.
  2. In a saucepan, brown your butter on the stovetop. Once it’s got brown flecks and is giving off a nutty aroma, remove it from heat and pour into a heat-safe dish. Mix in the coffee powder, and then let it cool slightly.
  3. Then add in the brown sugar. Mix until just combined. Add the egg, vanilla extract, and salt. Whisk until combined.
  4. Add in the flour, and baking powder. Mix until just combined.
  5. Lastly, add in the Heath bits and mix.
  6. Scoop batter into your prepared baking pan, and smooth it out. Bake for 25-30 minutes until the center stops jiggling when you gently shake the pan.
  7. Let cool for 10 minutes before cutting into them
