Ingredients

Muffins

  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup (1/2 stick) butter, melted and cooled slightly

Cinnamon Sugar Coating

  • 1/4 cup (1/2 stick) butter, melted
  • 1/4 cup sugar
  • 1 tsp cinnamon


Instructions

  1. Preheat the oven to 350 degrees F. Coat 6 of the muffin cups in a a standard size muffin tin with nonstick spray, or line with parchment.
  2. In a medium bowl, melt the butter. Then, combine with the milk and egg and whisk until smooth. 
  3. Then, add in the flour, sugar, baking powder, salt, cinnamon, and nutmeg and whisk until just combined, taking care not to overmix.
  4. Evenly divide the batter between the muffin cups and bake until a toothpick comes out clean, about 25 to 30 minutes. Let the muffins cool to set for 5 minutes in the pan, then transfer them to a wire rack to cool until slightly warm. This will help the coating adhere.
  5. Pour the melted butter into a shallow dish, then combine the sugar and cinnamon in a second shallow dish. Working one at a time, roll the muffins in the melted butter, then in the cinnamon-sugar mixture. Repeat with remaining muffins, butter and sugar.
