Matcha Strawberry Rice Krispie Treats

Ingredients

  • 2 tablespoons butter
  • 6.6oz or 3 2/3 cups mini marshmallows
  • 1 1/2 teaspoons matcha powder (plus 1/4 tsp more for chocolate, if desired)
  • 4 cups Rice Krispies cereal
  • 1/2 cup strawberry jelly
  • 4 oz white chocolate, for drizzling (optional)


Instructions

  1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Add matcha and stir until incorporated. Remove from heat.
  2. Add Rice Krispies. Stir until well coated.
  3. Using buttered spatula or wax paper evenly press half of the mixture into 8×8-inch pan coated with cooking spray or lined with parchment. Spread your strawberry jelly evenly over the half of the mixture, and then top with the rest of the Rice Krispie mixture. Press it down evenly until smooth. Allow bars to cool.
  4. Once the bars are cool, melt your white chocolate until smooth. You can add a 1/4 tsp of matcha powder to half of it if you’d like to have two drizzles.
  5. Drizzle chocolate(s) over the top of the bars. Then, cut into squares and serve. Best if served the same day.
