Lembas Bread Shortbread

Description

You can make this Lembas shortbread two ways – with honey or with brown sugar. The honey version is softer and lighter in color, more like how they look in the movie. The brown sugar version is still tasty, but results in a darker colored cookie.


Ingredients

  • 2 sticks butter
  • 1/2 cup brown sugar or 1/4 cup honey
  • ¼ tsp salt
  • 2 cups unbleached flour


Instructions

  1. Cream together the butter and sugar or honey until light and fluffy. Add the flour and mix until thoroughly incorporated. If necessary, use your hands and knead the dough until it’s smooth and no longer sticking.
  2. Turn the dough out and roll it to about ¼ inch thickness. Cut into 3”-4” squares, and place on a parchment-lined baking sheet. You can refrigerate until ready to bake, if desired, or just bake immediately.
  3. Once ready to bake, preheat the oven to 325 degrees. Score the squares with diagonal lines, but don’t cut all the way through. Bake for 20-25 minutes, until golden brown.
