Marzipan Chocolate Chip Cake

Ingredients

  • 150g marzipan, chopped into small chunks
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • Pinch sea salt
  • ½ cup sugar
  • 3/4 cup chocolate chips
  • ½ cup vegetable oil
  • 2 eggs
  • ⅔ cup yogurt
  • ¼ cup milk
  • 1 teaspoon almond extract
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 350 F. Line the bottom of a 8 inch circular pan with parchment paper and grease the sides lightly.
  2. In a bowl, combine the flour, baking powder and soda, sugar and salt and whisk together.
  3. Gently stir in the marzipan chunks and chocolate chunks, ensuring the marzipan pieces are coated evenly. Separate them with your fingertips if needed.
  4. In another bowl whisk together the eggs, oil, yogurt, milk and almond extract until smooth. Pour wet ingredients into the dry mixture and stir just to combine. The batter will be thick.
  5. Pour the batter into the prepared pan and smooth out the top using a spatula or the back of a large spoon. Bake for 40-45 minutes or until golden brown, and a toothpick inserted in the middle comes out clean.
  6. Remove from the oven and set aside for 15 minutes. Remove the side and leave to cool completely before decorating with the powdered sugar and cutting.
