I recently had two big life events happen: I turned 26 years old, and then a week later I started a new job! For my birthday, my sister got me these carrot glasses that are pretty perfect if you know anything about me. Adorable and carrot themed, to match the rest of the kitchen ware I have (pictured below). Everyone has to have a theme I think. For my mom, it’s roosters. For me, it’s carrots. When I got these glasses, I knew I had to make this Carrot Gin Cocktail.
Between my birthday and the new job, it’s been plenty of excitement for the past two weeks. But now it’s time for the real exciting bit: getting my own health insurance plan. Wahoo! I’ve got a pretty good plan at my new job, and one part of it is that you can join their “Wellbeing Program” to earn points. If you earn a certain number of points by the deadline, then you get a discount on the next year’s health insurance.
It’s a little silly, but earning the points is incredibly easy! I vowed that I do not smoke cigarettes and got 200 points, and I got 70 points just for going on my daily run. I’ll get 1200 points when I say that I have done something that brought me joy for 28 days. This cocktail brought me joy today, so I’m not even lying!
Part of this Wellbeing Program involved doing a little quiz/survey about my diet. It asked me things like how many fruits and vegetables I eat per week, and how many alcoholic drinks I consume.
But, crazy enough… it didn’t include a question on how many alcoholic servings of vegetables I consume per week?? Because, this cocktail is both a serving of vegetables and a drink. I guess it’s just a +1 for each question!
Gin is my favorite drink for cocktails, and luckily it also felt like it was the best pairing with carrot juice. Something about the botanical quality of gin felt like it matched with carrot juice. So a Carrot Gin Cocktail it was!
(If you have more interest in carrot cocktails, I also saw a recipe for a Carrot French 75 that looked good, but I don’t exactly keep champagne on hand!)
