Dark Chocolate Avocado Brownies with Peanut Butter Greek Yogurt Frosting

Ingredients

Avocado Brownies:

  • 8 ounces of melted dark chocolate
  • 2 well mashed avocados
  • 4 eggs
  • 1 cup of sugar
  • 1/2 cup of cocoa powder
  • 1/2 cup of almond meal
  • 1/2 tsp salt
  • 2 tsp vanilla

Peanut Butter Greek Yogurt Frosting

  • 8 oz plain Greek yogurt
  • 3 Tablespoons peanut butter
  • 2 Tablespoons cream cheese (low fat or full fat)
  • 2 Tablespoons maple syrup
  • 2 teaspoons vanilla extract

Instructions

Make the brownies:

  1. Melt the chocolate in a double boiler and set aside.
  2. In the bowl of an electric mixer, whisk together the eggs and the sugar at mediu high until VERY light and doubled in volume. Gradually add in the melted chocolate.
  3. Stir in the almond meal, cocoa powder, salt, and vanilla. Blend in the mashed avocado.
  4. Pour into a greased square baking pan.
  5. Bake at 350 for 20 – 25 minutes.

Make the frosting:

  1. Add Greek yogurt and peanut butter to a medium bowl. Beat on medium speed for 1 minute until combined.
  2. Add the cream cheese and maple syrup, beat for 2 minutes until combined and creamy. Add the vanilla extract and beat until smooth. Taste the frosting and add more maple syrup if desired.
  3. Let brownies cool completely before frosting and cutting.
