Nutella Coffee Brownies with Pistachio Frosting


Ingredients

Nutella Coffee Brownies

  • 1 cup Nutella
  • 2 eggs
  • 1/2 cup + 2 tbsp plain flour
  • Pinch of salt
  • 1 tbsp instant coffee, finely ground

Pistachio Frosting

  • 1/2 cup pistachio butter (see directions)
  • 1/2 cup butter (softened)
  • 23 cups powdered sugar
  • pinch salt, if desired

Instructions

Brownies

  1. Preheat the oven to 350 F and grease and line an 8 x 8 inch pan with baking paper.
  2. In a mixing bowl, combine the Nutella and eggs. Add the salt and coffee.
  3. Mix in the flour until it is just incorporated, then stir through the white chocolate chips.
  4. Pour the batter into the prepared pan and spread it out evenly.
  5. Bake for about 15 minutes, until the center is just set and the edges begin to crack.

Pistachio Frosting

  1. Make pistachio butter by grinding pistachios in a food processor until they become smooth and spreadable.
  2. Beat together the butter and pistachio butter until light and fluffy. Add in the powdered sugar and beat until well combined and your desired consistency is reached. Taste-test it, and add a pinch of salt if desired.
