Ingredients
- 1/3 cup creamy peanut butter, plus more for topping
- 3 tbsp butter, softened
- 1/2 cup packed brown sugar
- 1 tablespoon milk
- 3/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1 egg
- 1/3+1/4 cups all-purpose flour
- 1 1/4 cups Cheez-Its
- Whole Cheez-its for topping
Instructions
- Preheat oven to 325°. Line cookie sheet(s) with parchment paper. In a stand mixer fitted with paddle attachment, combine peanut butter, brown sugar, and butter. Beat on medium-high until light and fluffy, about 5 minutes.
- Add the egg, vanilla, and milk and beat until combined. Then, baking powder, baking soda, salt, and then gradually add the flour, beating on low to combine after each addition. Fold in the crushed Cheez-Its.
- Scoop dough in equal portions and shape into 1-2 inch balls. Place balls about 3 inches apart on prepared cookie sheets. Slightly flatten each ball, reshaping edges if needed. Top each cookie with a dab of peanut butter and a whole Cheez-It.
- Bake one sheet at a time, until light brown and centers appear set, 13 to 18 minutes. Cool on cookie sheets 10 minutes. Transfer cookies to a wire rack; cool completely, about 30 minutes.
