The Lord of the Rings marathon continues, and for the Two Towers, Lembas bread was the clear answer for what to bake. This reddit post that I referenced before shows that they eat Lembas bread 3 times in the Two Towers. And while it is part of a pivotal plot point in the Return of the King, they eat it the most in the second film. And, because Lembas bread is made up, that meant making Lembas bread shortbread.
We were introduced to Lembas bread in the first film, where Legolas introduced the Hobbits to Lembas bread and told them that a single bite can fill the stomach of a grown man. (Before Merry reveals he ate four of them.)
Frankly, it looks pretty flavorless in the movies. Which makes sense, because if it were a lightly flavored, soft honey shortbread, then no one would stop at just one bite.
I can also guarantee that this Lembas bread shortbread will garner a better reaction than Gollum’s reaction when he tried Lembas bread in the movie. (As in… there will be no cat hairball retching noises.)
You can make this Lembas shortbread two ways – with honey or with brown sugar. The honey version is softer and lighter in color, more like how they look in the movie. The brown sugar version is tasty, but results in a darker colored cookie.

Lembas Bread Shortbread

You can make this Lembas shortbread two ways – with honey or with brown sugar. The honey version is softer and lighter in color, more like how they look in the movie. The brown sugar version is still tasty, but results in a darker colored cookie.
Ingredients
- 2 sticks butter
- 1/2 cup brown sugar or 1/4 cup honey
- ¼ tsp salt
- 2 cups unbleached flour
Instructions
- Cream together the butter and sugar or honey until light and fluffy. Add the flour and mix until thoroughly incorporated. If necessary, use your hands and knead the dough until it’s smooth and no longer sticking.
- Turn the dough out and roll it to about ¼ inch thickness. Cut into 3”-4” squares, and place on a parchment-lined baking sheet. You can refrigerate until ready to bake, if desired, or just bake immediately.
- Once ready to bake, preheat the oven to 325 degrees. Score the squares with diagonal lines, but don’t cut all the way through. Bake for 20-25 minutes, until golden brown.
