“The best grilled cheese?!” you say. I can hear you now. “The BEST? Are you SURE?” There you go again. “Are you really so bold as to make that claim?” Okay, quiet! Yes, it’s a bold claim. Maybe an impossible claim to make. There really are so many ways to level up a grilled cheese. But this way is truly very good. And it requires only ingredients that I keep in my fridge.
I love apple butter. I’ve talked about it a lot, so I won’t go on and on about it here. But it’s a magical spread. It’s delicious when it’ sweet, and it is delicious when it’s savory. And I won’t go on about caramelized onions. All of that together, with the cheese? Incredible. Simple. Delightful.
I hope by now you’re saying “Oh I see now! I can see how this is the best grilled cheese!” I hope my mind reading predictions of what you are thinking are accurate. I am almost positive they’re correct.
This recipe is very barebones. I find writing a recipe for a sandwich… very difficult. Like that classic writing/proof-writing challenge they give you in grade school where they ask you to write the instructions for a PB&J and then do it to a tee. Do I need to tell you to take the bread out of the bag? Exact portions for each item? No! Measure with your heart!

The Best Grilled Cheese (Apple Butter Caramelized Onion Grilled Cheese)
Ingredients
- 1 onion
- 3 tablespoons butter, separated
- apple butter
- good bread
- Medium white cheddar
Instructions
- Slice the onion, and then use two tablespoons of butter to caramelize your onion. (You’ll have leftover caramelized onion to make more of these later.)
- Once your onions are caramelized, assemble the sandwich. Butter the outsides of your bread. Spread apple butter on the inside of each of them. Layer slices of cheese with a scoop of caramelized onion – enough to fill the sandwich, but not too much.
- Grill according to your preferences, and enjoy warm.
