This Valentine’s Day, I’m celebrating love. Not love for me. Love for my dear personal friend, Biberty Butumal Guy. In the latest Liberty Mutual ad, they’ve brought back the Biberty Butumal guy, and he’s found love! Finally, a rom-com story I can be invested in. A couple I can root for. Biberty Guy and Biberty Girl. Move over, Taylor and Travis! America has a new first couple!!
I’m glad Liberty Mutual has seen sense and brought back the only character in commercials who I care about. Jake from State Farm? Flo? I could not care less. I want to see Biberty Butumal Guy’s whole life. I want to see him and Biberty Girl live out a beautiful life together. I would watch a full length rom-com where they are the most boring people in the world and the only joke is that they constantly pronounce words wrong. It couldn’t be worse than this garbage that’s getting a theatrical release!
I was disappointed when they did not get a follow up commercial during the Super Bowl. I was convinced it was a lead up commercial to a Super Bowl ad that had their biberty wedding or something. But alas, it must have just been for Valentine’s Day. Oh well. I will take what I can get.
These cookies were originally going to be heart-shaped cutout cookies, and I was going to decorate them like conversation hearts. But I waited until the week before Valentine’s to look for heart shaped cookie cutters, and they were nowhere to be found. Even Valentine’s sprinkles were nowhere to be found. I’ve been walking past the displays for Valentine’s products since CHRISTMAS and patiently waiting til it was actually the holiday, but apparently everyone else buys Valentine’s baking ingredients in January.
So I just made these cookies and used up the sprinkles I had. I also tried to shape the balls of cookie dough into little hearts before they baked and it sort of worked. But they were not exactly what I originally had in mind. The flavors were going to be a creative spin on classic cutout cookies, but in this context they’re kind of just random.
Oh well, poor planning on my part I guess. Mainly I think that the commercialization of holidays needs to chill out! Then maybe I wouldn’t be so desensitized to the displays and would actually buy my festive things on time. Maybe I’m just looking to blame anyone but myself! But who cares! Blaming commercialization is the easiest thing in the world!!
So Happy Valentine’s Day! To all the people I love (aka, the people who read this). And also to Biberty Butumal Guy, who I also love. I hope he would get tongue tied over saying “Chocolate Cola Coconut Cookies.”

Chocolate Cola Coconut Cookies
Ingredients
For the Chocolate Cola Cookies:
- 1 sticks unsalted butter, room temp
- 3/4 cup sugar
- 1 tbsp corn syrup
- 2 tsp cola extract
- 1 egg
- 1 cup flour
- 1/4 cup cocoa powder
- 1/3 cups milk powder
- 1/2 tsp baking soda
- 1 tsp cream of tartar
- 3/4 tsp kosher salt
For the coconut frosting:
- 1 stick unsalted butter, at room temperature
- 1 tsp coconut extract
- 1.5 to 2 cups confectioners’ sugar, sifted
- 1⁄8 teaspoon salt
- 1 tablespoon heavy cream
Topping:
- Festive sprinkles
Instructions
- For the cookies: Combine the butter, sugar and corn syrup in the bowl of an electric mixer fitted with a paddle attachment and cream together on medium-high for 2-3 minutes. Scrape down the sides, add in the eggs and cola extract and beat for 7-8 minutes.
- Reduce mixer speed to low and add in the flour, cocoa powder, milk powder, cream of tartar, baking soda, salt, and spices. Mix just until the dough comes together – no longer than 1 minute. Scrape down the sides of the bowl.
- Using a 2 3/4 oz. ice cream scoop (1/3 cup measure) portion out the dough onto a parchment paper lined baking sheet – you should get 15-20 large balls of dough. Pat the tops of the cookie balls flat – wrap the sheet pan tightly in plastic wrap and chill for at least 1 hour or up to 1 week. Do not bake the cookies from room temp – they will not bake properly!
- Heat the oven to 350°F. Arrange the chilled dough at least 4 inches apart on the baking sheet and bake for 18 minutes – the cookies will puff, crackle and spread. Cool the cookies completely on the sheet pans before frosting.
- Make the frosting: In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed until soft, about 1 minute.
- Add 2 cups of the confectioners’ sugar, the salt, and coconut extract. Beat on low speed until the sugar is well incorporated.
- Add another 2 cups sugar and the cream. Add remaining 2 cups of sugar as needed to thicken the frosting. Beat on medium speed until the frosting is smooth and fluffy, about 4 minutes.
- Frost cookies generously. Fill a bowl with sprinkles. Place cookies frosting side down into bowl of sprinkles and press firmly to coat.
