These Matcha Strawberry Rice Krispie Treats came together like it was kismet. I needed to get rid of some extra Rice Krispies after making these Pistacharoos. I asked my brother for flavor ideas, and he suggested matcha. And when I realized I had some leftover strawberry jelly in the fridge to use up, I remembered these PB&J Rice Krispies. So it came together very quickly and, frankly, obviously. I simply had to do it.
My brother called these the “best Rice Krispie Treat he’s ever had.” He also admitted the bar is kind of low because he’s only really had plain Rice Krispie Treats before. But I think the point to be made is that… it’s very easy to make Rice Krispie Treats more exciting! Add some peanut butter! Add some chocolate! Add a new texture layer! Go crazy! It’s an incredibly plain vehicle… optimal for making it exactly the flavors you want!
I’m not a huge plain Rice Krispies person. They’re not terrible, but… they’re plain! And it is frankly so simple to zhuzh them up. It’s marshmallows and cereal. Adding to the recipe with a few other things will not substantially ruin it! It’s a very flexible and forgiving recipe! It’s even more exciting if you just add some mix-ins.
I have some vague recollection of making Rice Krispie Treats as a kid, and being really excited to make them because I thought they were a store-bought thing. But the process of making them was so messy, and I think my mom did a lot of it because it involved very hot melted marshmallow on the stove, and I was very young. I just remember thinking it was very messy and sticky. Which… if a child thinks something is messy and sticky, then it really is. For these, I followed the traditional recipe from the official Rice Krispie brand, and I definitely had to grease my hands to be able to press it down and get it off of the spatula. It was sticking to everything.
I’m realizing now that all but one of the matcha recipes I’ve posted to this blog have been matcha strawberry. But… how much of a problem is that really? They’re a perfect flavor combo. It just makes sense.

Matcha Strawberry Rice Krispie Treats
Ingredients
- 2 tablespoons butter
- 6.6oz or 3 2/3 cups mini marshmallows
- 1 1/2 teaspoons matcha powder (plus 1/4 tsp more for chocolate, if desired)
- 4 cups Rice Krispies cereal
- 1/2 cup strawberry jelly
- 4 oz white chocolate, for drizzling (optional)
Instructions
- In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Add matcha and stir until incorporated. Remove from heat.
- Add Rice Krispies. Stir until well coated.
- Using buttered spatula or wax paper evenly press half of the mixture into 8×8-inch pan coated with cooking spray or lined with parchment. Spread your strawberry jelly evenly over the half of the mixture, and then top with the rest of the Rice Krispie mixture. Press it down evenly until smooth. Allow bars to cool.
- Once the bars are cool, melt your white chocolate until smooth. You can add a 1/4 tsp of matcha powder to half of it if you’d like to have two drizzles.
- Drizzle chocolate(s) over the top of the bars. Then, cut into squares and serve. Best if served the same day.
